my obsession with waffle-izing batter-based foods into crispy delights is a bit tiring, i just can’t stress enough how simple + satisfying the payoff is!
i mean, if it’s not broke, why fix it!?
but waffle iron or waffle iron, the broccoli-cheese batter is really the star here.
the richness of the egg, the fresh bite of the broccoli + the indulgence of cheese trio, all combine to make the perfect bite!
these broccoli cheese bites are perfect for serving at a party, they make for a great change-up to your dinner side dish game or they even hit the spot as a light meal – cold or warm!
so as i have asked of you before, whip out your waffle iron, whisk up this batter + dollop these broccoli cheese bites into crisp perfection!
- 12 ounces uncooked or frozen broccoli
- 2 large eggs
- ⅓ cup shredded monterry jack cheese
- ⅓ cup grated parmesan cheese
- ⅓ cup panko breadcrumbs
- salt + pepper, to taste
- plug in your waffle iron to bring to full heat.
- bring a medium pot of water to boil.
- once the water is boiling, add in the broccoli.
- blanch the broccoli in boiling water for 1 minute then remove to a colander in the sink + immediately rinse with cold water to shock the broccoli.
- once the broccoli is cooled, chop it finely.
- in a mixing bowl combine the remaining ingredients + add the broccoli. mix until combined.
- using a 1 teaspoon measuring spoon, dollop the broccoli cheese mix onto your hot waffle iron + let it crisp for a few minutes.
- remove the broccoli cheese bite to a plate + repeat until the batter is all used up!
- enjoy while hot!
