we talked here about my love for guacamole.

this cucumber-avocado salsa is guacamole’s chill younger sister. it combines cool cucumbers with tons of diced creamy avocado + adds a sassy punch of jalapeno heat.

and unlike guac, there’s no mashing going on. just a casual hang of tasty ingredients.

i came across this recipe as the salsa topping for chili-rubbed steak tacos but i dare ya to also serve on its own! invite over some amigos + set up a salsa bar for a killer fiesta. throw this on the table alongside a mountain of warm tortilla chips, a classic pico, a fruity mango salsa + the spiciest guac you can find – your guests will never leave. well, until the bowls are empty, that is!

Ingredients
  • 1 large hothouse cucumber, peeled, seeded + diced
  • 2 avocados, diced {see second photo for a great tip on how to dice!}
  • ½ red onion, diced
  • 2 limes, juiced
  • ¼ cup cilantro, chopped
  • 2 jalapeno chiles, diced
  • 1 tsp kosher salt, more to taste
Instructions
  1. combine all of the ingredients + enjoy!

serve this salsa with these chili-rubbed steak tacos. it’s a winning combo!

because of the water level in the cucumbers, this salsa won’t hold up as well as others you may have made. i would suggest to make it as close to serving time as possible. if you do have a few hours before then, tightly cover with plastic wrap – making sure to press the wrap down on the salsa so the avocado doesn’t brown!

    doubled the recipe and made this for a Cinco de Mayo party… there were no leftovers. Huge hit and wonderful spin on salsa! Will be making it again.

    Tried this salsa with your steak taco recipe tonight and loved it! I would never think that cucumber and avocado went so well together.
