imagine this. .
it’s the day after christmas.
your natural body alarm alerts you out of bed + scurries you to the kitchen with breakfast on the mind.
as you open up the leftover-stocked fridge, you remember that your favorite cousins are sleeping in the guest bedroom. now, while your rumbling tummy might be satisfied with a stale piece of avocado toast, the holiday spirit is still brimming inside persuading you that something a little more special should be made.
so, you open your freezer, toss a puff pastry on the counter to thaw + retire to your bathroom to brush your teeth, hair + the lint off of your ugly christmas sweater.
in under thirty minutes, you’re bright-eyed + look ready for the day.
it’s back to the kitchen you go with easy entertaining on the mind.
the puff pastry is thawed + ready for brunch battle.
you grab a tupperware of leftover spinach dip + a few slices of serrano and cheddar from last night’s appetizer spread.
with a few cuts of your knife, a dainty spinach dip dollop + carefree layer of charcuterie, you my hosting friend, have nearly created the easiest brunch dish.
as you hear your house guests rustling in their room, you whisk up a quick egg wash, paint your dish with it’s final touches + glide it into the oven for the magic to happen.
by the time the 20 minutes have elapsed, you are lifting the bronzed beauties off the sheet pan + onto a serving platter!
as your family breaks off bites, you can smile ear-to-ear knowing that you made them feel like royalty – all while simply dishing out a few leftovers!
- 1 sheet of puff pastry, thawed
- 1 cup of spinach dip
- 5 slices of serrano ham
- 1 cup of shredded cheese {i used + highly recommend catamount cheese}
- 1 egg
- splash of water
- preheat the oven to 400º
- in a small mixing bowl, whisk the egg with a splash of water. set aside.
- lightly flour a work surface on your counter + lay down the thawed puff pastry.
- cut the puff pastry into four squares + lay onto a baking sheet that is lined with parchment paper or greased with cooking spray.
- spoon a scoop of spinach dip into the center of the puff pastry, top it with a slice of serrano ham, then the shredded cheese on top.
- fold the corners into + over the sides to form a small little package.
- using a pastry brush, coat the explosed puff pastry sides with the egg wash.
- bake for 20 minutes, or until golden brown! serve hot from the oven + enjoy!
i used serrano ham because it was {and usually is after holiday hosting} what i had on hand! but leftovers from a spiral ham would be uber awesome!
catamount cheese is from the brand Cabot + is exclusive to whole foods. after finding it, i am constantly searching for dishes to incorporate it in, therefore why i am super jazzed about it used here. BUT any cheese will do! i do suggest to stay on the white cheddar, swiss, parmesan end of the spectrum though. .
