do you have an overnight breakfast bake in your cooking arsenal?
the idea is simply magical – you assemble, you pour, you cover with foil + you let it hang in the fridge until a lazy morning arrives and then voila!
all the work is done + the gift from the breakfast gods is oven-ready to hit the table in under an hour with just the simple heat of an oven!
i came across this recipe when searching for the perfect way to entertain girlfriends after we kicked off a bachelorette weekend {#acunamasava #takemeback}.
and if i can pass along any wisdom to you, it’s that after a long night of dancing + drinking adult bevvys, the idea of standing on your own two feet over a hot stove as it billows smells at your face, is literally the worst thing ever.
alas! enter: the overnight bake! the make-ahead process just makes so much sense!
and no, i am not just saying that because i think cooking is easy. i am saying it because i believe in you + your skills -wherever they may be- and just know you can whip this up without one stress hive hitting your skin.
i took the classic breakfast combination of ham + cheese and added some green chile flair for the enchiladas sake.
i also wanted to keep the filling pretty simple so they remain crowd-pleasing. but if you hang out with the hot-sauce-lovers-of-america or maybe are a member of the US jalapeno enthusiasts – then toss in whatever else suits your groups fancy!
once you pick your toppings, you toss ‘em into a mixing bowl with cheese + diced cooked ham {which is a great way to use up leftovers – easter, i’m talkin to you!}.
then you place your ham mixture into the center of a tortilla, roll it up + lay it in a pan!
repeat until your enchiladas are assembled + then pour an egg + milk mixture over the top!
that’s it!
that’s the whole shebang!
another lovely facet to this endlessly customizable + totally tasty recipe is that you can make it to feed any size crowd – party of one! a gathering of gals! even a family of forty!
now, that my amigos, is something i can totally stand behind!
- 2 cups ham, cooked + cubed
- 8oz diced green chiles
- 4 green scallions, green + white parts sliced
- 12oz shredded cheese
- 10 flour tortillas
- 1 cup heavy whipping cream
- 5 eggs
- 1 tablespoon flour
- 1 teaspoon cayenne
- kosher salt + pepper, to taste
- spray a 9x13 oven-safe baking dish with cooking spray. set aside.
- in a small mixing bowl, whisk together cream, eggs, flour + seasoning. set aside.
- in a medium mixing bowl, combine the ham, green chiles, scallions + cheese.
- wrap paper towels around your tortillas. place them into the microwave for 30 seconds, to soften.
- lay a tortilla out on your counter. using a ⅓ measuring cup, place ham mixture a bit off-center on the tortilla {lengthwise}.
- roll the tortilla tightly + place seam-side-down into the baking dish. repeat with remaining 9 tortillas.
- pour the egg mixture, evenly, over the rolled enchiladas.
- cover the baking dish with foil + refrigerate.
- when ready to bake, preheat the oven to 350º.
- bake, covered, for 30 minutes. then remove foil + sprinkle remaining ½ cup of cheese over enchiladas. bake for 15 additional minutes, or until the egg mixture is set + the cheese is golden brown.
- serve with salsa, sour cream, avocado + sliced scallions. enjoy!
while these are named ‘overnight’ you are not held to that time-frame! you can assemble anytime from three days in advance to the morning of!

the filling on these enchiladas are totally customizable! just stay to one rule of thumb: use cooked ingredients + chop ’em small so they can be enjoyed by the bite!
for you tomato lovers – save the toms for the toppings. if you incorporate them in the filling it may risk a soggy outcome.
leftovers heat up like a dream. . AND the best way is via the microwave!
a great way to cut cals is to use skim milk instead of the cream. you can also use cottage cheese in the filling or watch your sodium by swapping out the ham for shredded cooked chicken or turkey bacon!
