today’s ambition:
cook with piri piri sauce!
do you guys know about degustabox?

the september box had this fiery little glass bottle of piri piri sauce. and once i read the ingredients, i was inspired to take a little walk down lettuce wrap lane.
think of the peri peri sauce as a hot sauce. but it boasts added flavors of sun-ripened lemon juice, garlic + the subtle fire of the african bird’s eye chilli.
while i didn’t quite know what all that meant in words – once i tried it, i smiled from ear-to-ear + knew it would blanket smashed yukon potatoes + chicken quite nicely!
and, as with any dish that leaves a bit of heat behind, it is always smart to combine the dish with cool + crisp veggies.
enter: english cucumber + iceberg lettuce
the crisp shell of the lettuce wrap + the cool cukes bring your palate back down to your plated reality + encourage you to go in for another bite!

happy lettuce wrapping, folks!
- 2 tablespoons coconut oil
- 1 cup cooked chicken breast, cubed
- 8oz potato medley
- ½ white onion, finely diced
- 4 tablespoons piri piri hot sauce
- 1 lime, juiced
- 2 tablespoons fresh cilantro, minced
- 1 head boston lettuce or iceberg, separated into ‘cups’ for holding the mixture
- ½ english cucumber, julienned for garnish
- fill a medium pot with water + bring to a boil.
- once boiling, add the potatoes to the boiling water + let boil for 10 minutes, or until fork tender.
- once fork tender, drain the potatoes + let cool to handle.
- chop the potatoes into small pieces {about the same size as your cubed chicken!}
- heat a skillet over medium-high heat + add 2 tablespoons of coconut oil.
- add in the onion + potatoes. let cook until they have turned translucent + browned up. add the cooked chicken + mix to combine.
- remove from the heat + stir in the piri piri sauce, lime juice + cilantro.
- scoop the piri piri mixture into the lettuce wraps + garnish with cucumber slices! enjoy!
you could swap the chicken breast cubes with ground chicken, ground turkey or even a ground chorizo. the chorizo would boost the heat factor + give a fun spin!
here are a few homemade versions of the piri piri sauce – while all are a bit different, they sound fantastic:

use the piri piri as a taco filling! i would suggest serving inside fluffy flour tortillas.
the filling will store in an air-tight container in the fridge for a few days! making this recipe great for lunches. . but be sure to store the lettuce wraps + cucumbers separate, serve when assembling + ready to eat!
corn would be an awesome addition to the potato + chicken mix.
