happy hump day!
guess what helps you get up and over the hump of mid-week?
an easy recipe!
like, a recipe so easy that you could probably get it from fridge to table even if you had a fever!
or even if you only had 38 minutes before you had to get everyone off to soccer practice!
or so easy that if you had last minute dinner guests, you could fix your makeup, change your shirt with this morning’s coffee stain on it AND pour yourself a generous glass of vinho verde THEN make dinner.
alright. i think you get it.
this recipe is easy.
you need sliced veggies, a protein, fajita seasoning + some limes!
for the veggies, you can slice-n-dice them yourself OR let the grocery store do the work for you. you can get ‘em pre-chopped in the produce section or scoop up a bag from the frozen section.
and as for the fajita seasoning, they literally sell it by that name in the spice aisle! BUT if you’re feeling like a total Martha -and if i know you, then i KNOW you are!- then i suggest to whisk the seasoning up yourself!
this may sound hard, or like i just extended the recipe about 14 minutes BUT it’s really a cinch! and might add on 3 minutes of prep time. another great benefit to making your own seasoning is that you can have fajitas whenever you wish – no need to make sure the store-bought packet is in the cupboard!
some may bring up the point that praising these one-sheet pan fajitas for being fast or easy really isn’t reinventing the wheel – fajitas in general are already pretty much that way when you make ‘em stove top.
well, while you are being a smartass correct, when you make ‘em stove-top you have to hover. you have to stir. you have to keep an eye out.
with this easy sheet pan meal, you simply toss the ingredients on the pan, give it a mix + bake until your dinner bell timer rings!
give these a try tonight! i know you + yours will love every last bite!
- 1lb boneless, skinless chicken breast, cut into slices
- 1 red bell pepper, seeds removed + sliced
- 1 orange bell pepper, seeds removed + sliced
- 1 poblano pepper, seeds removed + sliced
- 1 jalapeno, sliced {remove the seeds + ribs for less heat}
- ½ yellow onion, sliced
- 2 tablespoons olive oil
- 1 lime, juiced
- 2 tablespoons fajita seasoning {see recipe below}
- tortillas of choice, avocado, sour cream, cheese, hot sauce, etc. .
- preheat your oven to 425º
- in a small bowl, combine the oil + lime juice. set aside.
- on a large sheet pan, combine the peppers, onion + chicken.
- pour the oil mix over the chicken + peppers. be sure to coat them as best as possible.
- toss the seasoning over the mix + stir to coat.
- bake in the oven for 12 minutes.
- when the timer is done, remove from the oven + serve on top of your favorite tortillas + toppings! enjoy!

once you make it, i guarantee your packet days will be over!
you can swap the chicken for your favorite protein of choice! pork, steak + chickpeas all make for excellent swaps!
this dish is SO easy to make for one serving – simply portion out as much food as you would like + bake for the same time.
i suggest an ice cold corona or if wine is your speed, then a vinho verde would be magical!
leftovers hold up great! a great way to repurpose them is to throw everything atop a bowl of greens or grains for a lunch salad!
