guys, i am a walking stereotype come true.
this little irish lass {..by heritage} thinks that a creamy bowl of mashed potatoes is the very best part of any holiday meal!
mashed potatoes have a super nostalgic place in my heart.
growing up, they were always at every flynn gathering – be it thanksgiving, christmas or even a sunday supper at my grandma’s – mashed potatoes were there in all their carby glory!
while, i can admit that sometimes the boxed flakes hit the fold-out table, mostly always you could find my aunt hand mashing her heart out in a stove-top pot of yukon golds.
homemade mashed potatoes were one of the first things i mastered – yes, i am giving myself that credit – when i started cooking.
so, when i saw the pinterest pins persuading me that they could be made in a slow cooker, i just knew i had to whip out my best myth busting skills!
want to know what happened?
i waltzed into the cooking experiment with sass blazing + in my very first stab at it. .
they totally rocked my mashed-potato-obsessed world!
it REALLY is as simple as tossing in some ingredients + hitting ‘cook on high’!
it ACTUALLY frees the stove-top + takes the worry off your mind!
it ABSOLUTELY delivers mashed potatoes with the perfect consistency – just like stove-top!
all i can say is that i made my flynns proud today.
not only did i master another mashed potato method but i cleared up some more stove-top room for one of my silly uncles to whisk up homemade gravy to top these puppies with!
{spoiler alert: homemade gravy is coming to the blog on monday! #SEGWAY! #NAILEDIT}
- 1 head of roasted garlic
- 1 teaspoon olive oil
- 5 pounds yukon gold potatoes, peeled + chopped
- 1 cup chicken broth
- 1 cup whole milk
- 6 ounces sour cream
- 1 stick of unsalted butter
- kosher salt + fresh ground pepper, to taste
- spray your slow cooker with nonstick spray. add the potatoes, chicken broth + milk.
- place cover on + cook on high for 3 hours.
- when potatoes are fork tender, add the sour cream, garlic + butter to the crockpot.
- using a potato masher, hand-mash the potatoes until desired consistency is achieved. {see cooking notes below for other options}
- taste the potatoes for seasoning, adjust to your liking! you may also add in more milk to reach desired taste + consistency.
- turn heat to low + cover until ready to serve. enjoy!

you may use a hand mixer or immersion blender to whip the potatoes smooth.
sour cream is my preference for flavor! but cream cheese, brie or heavy cream are all tasty alternatives!
I am definitely making these for thanksgiving! i love potatoes of any kind!
